One Man’s Case for Millets
We listened to Dr. Khader Vali. Some ideas made us think. Others made us ask questions.
Spend enough time reading about millets in India, and one name eventually appears: Dr. Khader Vali.
Often described as the “Millet Man of India,” he has spent years advocating for a return to traditional grains and questioning many assumptions about the modern Indian diet.
We recently listened to a long-form conversation with him about millets, agriculture, food preparation and health.
It is a fascinating conversation.
It is also a conversation worth listening to with curiosity and a little caution.
Because some of Dr. Vali’s ideas align with a growing body of research around millets. Some are intriguing but need much more evidence. And some of his health claims go considerably further than current scientific evidence allows us to conclude.
Rather than summarising the entire conversation, here are a few ideas that made us stop and think.
1. Millets aren't only a nutrition story

One of the most interesting parts of Dr. Vali's argument isn't about what's on a nutrition label.
It's about how our food is grown.
He contrasts millets with crops such as rice and wheat, arguing that millets can require considerably less water and are naturally suited to more challenging growing conditions.
The precise water figures he gives shouldn't simply be accepted as universal numbers—they can vary significantly depending on the crop, geography and farming method.
But the larger idea is worth paying attention to.
Millets are increasingly being studied and promoted for their ability to grow in relatively dry conditions, tolerate climatic stresses and contribute to more diverse agricultural systems.
It changes the question from:
“Is this grain healthy?”
to:
“What kind of food system does this grain belong to?”
For us, that's a much more interesting conversation.
2. Then there is the fibre question

Dr. Vali spends considerable time talking about the fibre structure of millets and how it affects the way their carbohydrates are digested.
His explanation is unusually specific.
He argues that the fibre associated with certain minor millets slows the release of glucose compared with refined grains such as polished white rice.
There is some encouraging research behind the broader idea.
Studies examining millet consumption have found promising results around glycaemic response, and millet-based foods can have lower glycaemic responses than some refined grain alternatives.
But preparation matters. Millet variety matters. Processing matters. And replacing one food with another does not automatically produce the same result in every person.
So we wouldn't turn this into:
“Millets don't raise blood sugar.”
They do contain carbohydrates.
The more useful takeaway is that the structure, fibre content and processing of the grain can influence how our bodies respond to it.
That's a distinction worth making.
3. His most interesting idea may actually be preparation
Throughout the conversation, Dr. Vali returns to something that modern nutrition discussions sometimes overlook:
How we prepare food matters too.
He advocates soaking millets before cooking and gives specific soaking periods depending on whether the grain is whole, broken or ground into flour. The transcript analysis identified those precise timings as claims that still require independent verification rather than established rules.
We wouldn't present his exact timings as a scientific requirement.
But the broader subject is fascinating.
Soaking, fermenting, grinding and cooking can change the physical and nutritional characteristics of grains. Traditional kitchens discovered many of these preparation methods long before we had laboratories to explain what was happening.
Which brings us to another word that appears in the conversation:
Ambali.
A fermented millet porridge.
Dr. Vali makes ambitious claims about Ambali, gut microbes and even the gut-brain axis. Those larger claims need substantially more clinical evidence.
But fermented millet foods themselves?
That's something we'd like to learn more about.
4. Where curiosity needs caution
This is also where we think conversations like this become particularly important.
Dr. Vali doesn't stop at arguing that millets can be nutritious or environmentally interesting.
At points in the wider interview, he makes very strong claims about diet and serious medical conditions, including cancer, diabetes and other diseases. Our review of the conversation identified these as claims that should not be treated as established medical evidence.
We think that distinction matters.
Traditional foods can be valuable without being cures.
Millets don't need to cure cancer to deserve a place in our kitchens.
Ragi doesn't need to solve every nutritional problem to be a useful grain.
And centuries of traditional food knowledge don't become less interesting simply because we ask for stronger evidence before making medical claims.
In fact, perhaps respecting traditional knowledge also means taking it seriously enough to investigate it properly.
So, where does that leave us?
Probably somewhere between unquestioning enthusiasm and easy dismissal.
Dr. Khader Vali makes a passionate case for millets.
We don't agree that every claim made in the conversation should be taken as established fact.
But several of the questions he raises are worth asking:
Why did some traditional grains disappear from our everyday diets?
Should water and climate resilience influence what we grow and eat?
How much does processing change the food that eventually reaches our plate?
And what might traditional preparation methods teach us that we've forgotten to ask about?
Those questions are worth exploring.
And sometimes that's enough reason to listen.
